Owning a Bed & Breakfast Inn in Michigan has given me the experience in hospitality and cooking a beautifully presented breakfast. You must always be organized and looking out for surprise catches in your daily routine. One of my favorite recipes would be Eggs Benedict. One of the Inns I worked at had 16 guests for breakfast. Making sure the eggs are poached to perfection and keeping the food warm for each guest is so important. Funny I should pick an egg dish. I recently visited my brothers 40 acre chicken farm. Yes, he gave me a dozen eggs. They had one egg that fit in the entire palm of your hand. It is surprising that the chicken lived after hatching it. The video showed after cracking outer shell there was an entire shelled egg inside. Amazing eh? Until my apron travels again.
